- Ingredients:
- Sugar -- 2 cups
- Water -- 1/2 cup
- Citric acid -- 1/2 tablespoon
- Fruit essence -- 1 tablespoon
- Food color -- According to need
- Instructions:
- Add sugar and water to a heavy-bottomed pan and heat on medium.
- Stir until the sugar dissolves, then add citric acid.
- Cook without stirring until the syrup reaches hard-crack stage (About 150 degree Celsius / 302-degree Fahrenheit).
- Remove from the heat and quickly mix in fruit essence and food color.
- Pour small drops onto a greased surface or silicone mat.
- Let them cool and harden completely. Store airtight.
- Note and Tips:
- Cook the mixture in a heavy-bottomed pan over medium heat.
- Cook the syrup undisturbed until it reaches the hard-crack stage at approximately 150°C (302°F).
